Clementine and Salmon salad

  • 600g Ritchie’s sliced smoked salmon

  • 2 bunches watercress or rocket (remove stalks)

  • 10 clementines

  • Salt & pepper

  • extra virgin olive oil

  • 1 lemon

  • Festive but light! The sharp clementine contrasts perfectly with the buttery, saltiness of our famous smoked salmon and makes a perfect starter on Christmas day.

    Ready in 15 minutes. 
    Serves 4. 
    Easy Difficulty

    1. Combine the juice of two of your clementines with the same amount of olive oil. Season with salt and pepper and use to dress your watercress or rocket.

    2. Peel and thinly slice the remaining 8 clementines and arrange on a serving dish with our sliced smoked salmon.

    3. Toss the salad and arrange on top of the salmon and clementines.

    4. Cut the lemon in to wedges and add to the plate.
