Scottish Smoked Cheese and Whiskey Cauliflower Bake

  • Ritchie's Oak Smoked Cheddar, grated - 120g 
  • Medium cauliflower - 1
  • Mushrooms ,chopped - 120g 
  • Green pepper, chopped - 1 
  • Double cream - 300ml 
  • Scotch whisky - 90ml 
  • Oatmeal - 90g
  • Pinch of nutmeg 
  • Salt and Pepper 

A Scottish delight! This is the perfect accompaniment to your favourite steak or good enough to eat on its on. 

Ready in 1 hour

Serves 4. 


  1. Preheat oven to 180C.
  2. Remove the cauliflower stalks and cook the florets in hot water for five minutes.
  3. Drain and put into an ovenproof dish with the chopped mushrooms and green peppers.
  4. Heat the cream gently in a small pan, add the cheese, stirring frequently. When the cheese has melted, remove from the heat and mix in the whisky and oatmeal.
  5. Add salt and pepper to taste and the pinch of nutmeg. Pour over the cauliflower and sprinkle the chopped nuts on top.
  6. Bake  for 45 minutes. Serve immediately.
