Valentine's Day recipes for fish lovers

Valentine’s Day, which has evolved considerably from its roots as an ancient Roman fertility festival, is a day to celebrate love, in all its forms. In a world where negative headlines increasingly become the norm, let’s take a moment to count our blessings and go the extra mile for those we love. So, whether you're cooking for your partner, family or friends, here are two recipes to make your Valentine’s Dinner one to remember.

Something cheesy... (Serves four)

This is a perfect dish to make for your family or guests, with some delicate and buttery oak smoked salmon. It's simple yet delicious. Just melt two tablespoons of butter into a pan, add in 100g of grated oak smoked Scottish cheddar, 400ml of milk, 1/4 a teaspoon of mustard, 1/2 a teaspoon of nutmeg, a pinch of salt and pepper and 100g of sliced smoked salmon. Allow the ingredients to heat and melt together, and gently stir.  

In another pan, boil 300g of pasta (penne, fusili or macaroni) and drain it 3 minutes before it's cooked. Now, mix the pasta and melted cheesy goodness together, add it to an oven dish, cover it in grated Parmesan cheese and put it in the oven (180C). Once golden brown, serve it up with some steamed asparagus, drizzled with butter to melt your guests taste-buds.

A romantic meal for two...

This pesto-covered roasted salmon dinner will woo your date, and is also a great recipe for those who aren't culinary experts. It couldn't be easier, or tastier! 

Cover some of our fresh roasted smoked salmon in pesto sauce. Then, drizzle a Portobello mushroom with oil, stuff it with cream cheese and sprinkle it with blue cheese. Add both the stuffed mushroom and roasted salmon to the oven for 15-20 minutes (180C). Serve it up with some steaming asparagus on the side, and get ready for a sensory experience you won't forget.
